He has 19 years of work experience as a chef specialized in Indian cuisine and Tandoor. His students has won 3 gold, 1 silver and 1 Bronze in SICA( South Indian Culinary Association) and ACP( Association of catering professionals) under his mentorship.

What are your roles and responsibilities towards the students?

As I am a Carving chef, I want my students to have an in-depth knowledge of carving, I believe them in giving step by step procedural knowledge like peeling,designing,finishing, For example in salad, we have base ,body ,dressing, garnishing, like that in carving also we have the same steps need to be followed.


How do you tend to establish healthy relations with the students and fellow faculty? 

By mutual respect and active listening to their problems and finding solutions to them we can develop healthy relations.

How do you try to bring in a practical approach towards subjects and make it industry oriented?

Carving is practice-oriented subject ,so I make sure that I ensure my students are learning the right techniques for the same .I take surprise tests of the students that how much they are absorbing the skills.In my Carving subject I make them realize that carving need lot of patience to deliver the required idea,if they show patience and skills they can excel in this field.


What are your views upon the placements and higher education about the students from your department and thoughts on the competition outside ?

According to NEP(New education policy)it is proposed to put lot of emphasis on carving skills as it has lot of scope and possibilities.It is a subject which is still need to deliver a lot.It tell and teach them about the latest skills in this field,difficult areas also I touch and ask students to learn the same so that they can create their own niche for them.


Do you have any extracurricular activities and what are the challenges faced in your department?

"I keep on motivating students for the same and tell them about the good opportunities in this field"

Regular carving competitions which are theme based we try to organize so that students can bring their own innovative ideas and develop their techniques too. Students need a lot of motivation and hard work to build a career in this field.


What are the interventions and approaches you bring in apart from curriculum to train/teach the students? 

First of all, I teach them how to practice drawing in a sketchbook so they get practice on paper first then I teach them the various layers of fruits and vegetables so that they know how much to cut and carve .Teach them how to hold the knife properly and make them practice the same.

What valuable advice would you like to the students for them to have a prosperous career ahead?

I always advise students to do hard work, have a good attitude for learning and dedication along with regularity and punctuality.
