This is a very subjective question. On the one hand, I would say that while NIT Trichy and MNNIT/IIIT Allahabad are all at par with each other, CSE branch has better future prospects than the Mechanical branch in the present scenario. Therefore, you made the right decision by leaving NIT Trichy Mechanical and taking MNNIT/IIIT Allahabad CSE.
But I would also like to point out that it is ultimately a matter of your personal interest and will. Though the wind is moving in a certain direction at present, the scenario might change in the future. If you go by the trend or by outside pressure, they might fail you. If you are genuinely interested in Mechanical, you will land a good job for yourself despite the current trend.
These are the statistical figures to give you an idea of the placement trend at all the three institutions according to the streams that you have mentioned for each.

You should keep into consideration the placement figures, ROI, and the current trend to finally arrive at a decision. However, also keep in mind that your interest in a subject is what matters the most and which will ultimately determine your success.
In present times, two different departments cannot be compared overall. Making a judgment about two different streams with different levels of opportunities is not wise in the field of engineering. In this case too, the points below state the reasons why the two choices are incomparable.
Therefore, it is absolutely wise to switch between the options given in the question, with the only mandate that you should listen to your mind before making the choice.
