Will more than 36 months of IT work experience prove to be a roadblock for getting a good marketing profile and B-school placement after an MBA/PGDM at the IMT in Ghaziabad or NMIMS?

After your MBA you will possibly be expected to give your opinions at the ground level because, at this point, you are on the intellectual side as compared to the executor side. This is where people with more work experience are valued because your previous experience will come in handy.
